Hi Kalyn! Let me know if you do track some down; I've had some emails from US readers who are also trying to find it. I'm surprised it's elusive, simply because it's such an easy thing for stores to stock; being brined, it keeps, refrigerated, in its little vacuum case for months. I think the sell-by date on the cheese I used yesterday was at least six months in the future!
