Since I wrote this post, more of the UK supermarkets have been selling goose fat - I've seen it consistently in Tesco, Sainsbury's and Waitrose. You can also order a jar online from http://www.goosefat.co.uk/. Hope this helps!Lizhttp://www.blogger.com/profile/13896235681242722952noreply@blogger.comtag:blogger.com,1999:blog-17613825.post-10200807028431942122007-06-04T04:16:00.000+01:002007-06-04T04:16:00.000+01:00It was very interesting for me. I think we might be having this dish again on Sunday evening - it's very seasonal, and it was *very* good.Lizhttp://www.blogger.com/profile/13896235681242722952noreply@blogger.comtag:blogger.com,1999:blog-17613825.post-1137216476285891712006-01-14T05:27:00.000Z2006-01-14T05:27:00.000ZI made this last night. We had a guest over last night and managed to finish the lot.

Schmaltz should be delicious, by the way!

I notice I didn't tell you what to do with the two onions you don't stuff in the recipe - I'll fix it in an hour when I'm at home. Chop them roughly and strew them in with the other veg. Ain't nothing wrong with a whole lotta schmaltz, though.

I like the idea of stuffing the onion with thyme.

Do you accompany this dish with any main entree when you make it?Cait Shortellhttp://www.blogger.com/profile/04881262643585481120noreply@blogger.comtag:blogger.com,1999:blog-17613825.post-1137032171189804372006-01-12T02:16:00.000Z2006-01-12T02:16:00.000ZGoose Fat! It comes in jars or in tins, depending on brand. Tesco also have it occasionally. Fortnums too - you could also just roast a duck and save the fat. They're a bit like short, fat geese.

If you're in France, it's available in all supermarkets and is much cheaper than it is here, so if you're in Calais for the day, it's well worth picking a few tins up. I use it quite a lot; try roasting your potatoes in it. They'll be the crispiest, fluffiest potatoes you've ever had.Lizhttp://www.blogger.com/profile/13896235681242722952noreply@blogger.comtag:blogger.com,1999:blog-17613825.post-1137010903465855612006-01-11T20:21:00.000Z2006-01-11T20:21:00.000Zok, a question:where to get the goose fat without ...ok, a question:

where to get the goose fat without having to buy a whole goose??!!Urban Chickhttp://www.blogger.com/profile/17486910623660734437noreply@blogger.com
